Wickles Cheesy Spicy Stuffed Chicken Breasts

Eat this alone or on a roll for a delicious, cheesy, spicy, sandwich.


  • 4 chicken breasts
  • 2 cups Dirty Dill pickle brine
  • 8 slices provolone cheese
  • 2/3 cup Jalapeño Relish 
  • 1/2 cup grated parmesan
  • salt and pepper
  • 1 tbsp olive oil
  • Rolls, tomato, lettuce if making sandwiches


  1. Brine the chicken breasts in Dirty Dill Pickle juice for 30 minutes, remove and dry breasts off.
  2. Pre-heat the oven to 400º.
  3. Butterfly the chicken breasts by cutting through the middle of the chicken, leaving the back edge un-cut.
  4. Open up the chicken breasts and place 2 tbsp of Jalapeño Relish inside, spread in a thin layer.
  5. Fold 2 slices of provolone into each breast, then sprinkle with parmesan.
  6. Season the outside of each breast with salt and pepper.
  7. Fry the breasts for 4 minutes, then flip them and finish baking in the oven for 8-12 minutes depending on thickness of the breasts.
  8. Serve on a roll with lettuce and tomato, if desired.
