Ingredients:

  • Wickles Original Pickle Chip
  • 2 pounds of shredded russet potatoes
  • 2 eggs
  • 1 tbsp all purpose flour
  • 1 tsp garlic powder
  • 1 ½ tsp paprika
  • 1 tsp onion powder
  • ¼ tsp cayenne pepper
  • 1 tsp potato starch
  • Salt and pepper to taste
  • ½ cup canola oil

Directions:

  1. Make sure potatoes are very dry and add to a bowl. Add eggs, flour, garlic powder, paprika, onion powder, cayenne pepper, salt, pepper, and potato starch. Combine.
  2. Dry Original Pickle Chip and coat them in potato starch, then in the potato mixture.
    Heat up canola oil in a large saute pan. Fry potato pancake on both sides for 2-3 minutes. Drain on a rack of paper towels and sprinkle with more salt.
  3. Serve with sauce of your choice.
