Wickles Spicy Street Corn Salad

Summer is in full swing and Wickles Spicy Street Corn Salad is on the menu! Light, refreshing, crunchy and a touch spicy will have you and your guests reaching for more.


  • For Base
  • 4 cups corn (frozen or 4 corn husks boiled or grilled, and cut from husk)
  • ½ cup cotija cheese
  • ¼ cup cilantro, chopped
  • ¼ cup scallions chopped
  • For Dressing
  • 2  tbsp mayonnaise
  • 1 garlic clove, minced
  • 1 lime, juiced
  • ½ cup Wickles Wicked Jalapeño Relish


  1. Combine prepared corn, cilantro and scallions
  2. In separate bowl, combine mayonnaise, garlic, lime juice, and Wickles Wicked Jalapeño Relish 
  3. Mix together until well combined
  4. Sprinkle with cotija cheese
  5. Top with additional Wickles Wicked Jalapeño Relish, serve immediately
