Wickles Pulled Pork and Coleslaw Egg Rolls

Pulled pork isn’t just for buns!

 

Wickles Pulled Pork and Wicked Coleslaw Egg Rolls are the perfect protein packed appetizer that brings the heat thanks to Wickles Dirty Dill Baby Dill Pickles. Try this recipe fried, or air fried! The choice is yours.

Ingredients:

  • 2 lb pork shoulder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup each red and green cabbage, thinly sliced
  • ¼ cup carrots, thinly sliced
  • ¼ cup Dirty Dill Baby Dills, thinly sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup mayo
  • 1 tablespoon sugar
  • 1 tablespoon lemon juice
  • Egg Roll Wrappers

Directions:

  1. Place pork shoulder in slow cooker, cover with salt, pepper
  2. Cook for 6 hours on low, then shred
  3. Mix all of the slaw ingredients together (cabbage, carrots and onion)
  4. Place 1 full tablespoon of shredded pork, ½ tablespoon of prepared slaw and slice of Wickles Dirty Dill Baby Dill on egg roll wrapper corner
  5. Roll and wrap, using water to seal the edges
  6. Cook based on your preference:
    OPTION A – Add to air fryer, coat with cooking spray and cook until crispy on all sides
    OPTION B – fry in vegetable oil until golden and crispy
