Preheat grill or grill pan over medium heat for 10-15 minutes
Thinly slice all of your summer vegetables
Combine olive oil, balsamic vinegar, minced garlic, chopped basil, salt and pepper in a bowl then brush onto vegetables
Lightly spray grill grates or grill pan with cooking oil of your choice
Cook vegetables undisturbed for 5 minutes per side or until tender and grill marks appear
While vegetables are cooking, slice bread and coat with a thin layer of olive oil, place on grill grates to toast
Gently flip vegetables and cook for another 5-10 minutes to your preferred doneness then remove bread and vegetables from the grill
Spread goat cheese on one side of the bread, layer grilled vegetables and roasted red peppers, add a handful of arugula then top with Wickles Spicy Red Sandwich Spread
OPTIONAL – marinate chicken breast with remaining olive oil, balsamic vinegar, minced garlic and chopped basil for 30 minutes then grill until cooked through, slice thinly and add to your Spicy Red Goat Cheese Panini
